Hajime Kasuga & Bingata

Chef Hajime Kasuga has a strong passion for Nikkei cuisine, a fusion of Japanese and Peruvian flavours. Similarly to the bingata, a traditional dyed cloth, adorned with representations of nature – fish, water and flowers, believed to have developed as a synthesis of Indian, Chinese, and Javanese dying processes.
